Ingredients

Seafood and Seasonings

  • 1 1/2 lb raw king prawns, peeled
  • 1 tsp paprika powder
  • 1/2 tsp red pepper flakes (optional)
  • 2 tsp garlic powder
  • 1 tsp black pepper
  • 1 tsp salt

Cooking Base

  • 2 tbsp olive oil
  • 6 cloves garlic, minced
  • 1 tbsp olive oil
  • 1/2 cup sun-dried tomatoes, chopped

Pasta and Vegetables

  • 1 cup orzo (uncooked)
  • 2 cups chicken broth
  • 1 cup broccoli, finely chopped
  • 2 cups fresh spinach

Finishing Ingredients

  • 1 cup heavy cream
  • Salt and black pepper, to taste

Instructions

  1. Season the Prawns: In a bowl, combine the king prawns with paprika powder, red pepper flakes (if using), garlic powder, black pepper, and salt. Toss gently until all prawns are evenly coated with the spices.
  2. Cook Garlic and Prawns: Heat a large pan over medium-high heat. Add 2 tablespoons of olive oil and the minced garlic, cooking for about 30 seconds until fragrant. Add the seasoned prawns and cook for 2-3 minutes on each side until they turn pink and are cooked through. Remove the prawns from the pan and set aside.
  3. Sauté Sun-Dried Tomatoes: To the same pan, add 1 tablespoon of olive oil and the chopped sun-dried tomatoes. Cook for around 30 seconds to release their flavors.
  4. Toast Orzo: Add the uncooked orzo to the pan, stirring continuously for about 1 minute so the pasta gets coated in oil and spices, and lightly toasted.
  5. Add Broth and Broccoli: Pour in the chicken broth and stir well, scraping up any browned bits from the pan to incorporate flavor. Add the finely chopped broccoli and mix thoroughly.
  6. Simmer Orzo: Bring the broth to a gentle bubble, then lower the heat to simmer. Cover the pan with a lid and cook for 7-8 minutes, stirring 2-3 times during cooking to prevent sticking, until the orzo is tender.
  7. Add Spinach and Cream: Once the orzo is cooked, stir in the fresh spinach and heavy cream along with salt and black pepper to taste. Cook for another 2-3 minutes until the spinach wilts and the sauce thickens slightly.
  8. Finish with Prawns: Add the cooked prawns back into the pan and cook for an additional 2-3 minutes until they are warmed through.
  9. Serve: Serve the prawn orzo hot, garnished if desired, for a satisfying creamy seafood meal.
