These Pizza Roll Ups are a fun and easy appetizer or snack that combine the classic flavors of pizza in a convenient, handheld form. Rolled up with tortilla wraps filled with pizza sauce, mozzarella cheese, and pepperoni, then baked to melty perfection with a sprinkle of Italian herbs on top, these roll ups are perfect for parties, lunchboxes, or quick bites.

Ingredients

For the Roll Ups

  • 20 small tortillas (about 5 inches wide)
  • 14 oz pizza sauce
  • 24 oz shredded mozzarella cheese
  • 80 slices pepperoni

For Topping

  • 1 tbsp cooking oil
  • 1/2 tsp garlic powder
  • 1/2 tsp Italian seasoning
  • 1/2 tsp garlic salt

Instructions

  1. Prep the oven and baking pan: Preheat your oven to 350°F (175°C). Lightly spray a large baking pan with cooking spray or oil and set aside.
  2. Fill each tortilla: Lay out each small tortilla and spread 1 tablespoon of pizza sauce evenly over it. Then sprinkle 1/4 cup of shredded mozzarella cheese and place 4 slices of pepperoni on top.
  3. Roll up tortillas: Tightly roll up each filled tortilla to create the roll ups.
  4. Arrange in pan and oil: Place the rolled tortillas seam-side down in the prepared baking pan. Brush the tops lightly with cooking oil to help them brown and crisp.
  5. Top with herb seasoning: In a small bowl, mix together the garlic powder, Italian seasoning, and garlic salt. Sprinkle this herb mixture evenly over the top of the roll ups.
  6. Bake: Bake in the preheated oven for about 10 minutes or until the cheese is melted and the tortillas are lightly golden and crisp.

Notes

  • For extra crispiness, you can broil the roll ups for 1-2 minutes at the end of baking—watch carefully to avoid burning.
  • You can substitute pepperoni with other toppings like cooked sausage, ham, or vegetables.
  • Use low-moisture mozzarella cheese to avoid sogginess.
  • These roll ups can be made in advance and refrigerated before baking.
  • Serve with extra pizza sauce or marinara for dipping.
