Pistachio Overnight Oats are a creamy and nutty breakfast option that’s easy to prepare ahead of time. Made with rolled oats soaked in pistachio milk, Greek yogurt, chia seeds, and flavored with vanilla and cinnamon, this make-ahead meal prep recipe offers a delicious, wholesome start to your day. Topped with crunchy chopped pistachios and optional pistachio cream, it’s perfect for a convenient grab-and-go breakfast with an elegant twist.

Ingredients

Base Ingredients

  • 2 cups rolled oats
  • 2 cups pistachio milk (can substitute almond, oat, or dairy milk)
  • 1 cup Greek yogurt
  • 3 tbsp maple syrup
  • 2 tbsp chia seeds
  • 1 tsp vanilla bean paste or extract
  • ½ tsp ground cinnamon
  • Pinch of salt
  • ½ cup shelled pistachios, chopped

Toppings

  • Pistachio cream (store-bought or homemade)
  • Extra chopped pistachios
  • Fresh fruit (optional)

Instructions

  1. Combine Ingredients: In a large mixing bowl, mix together the rolled oats, pistachio milk, Greek yogurt, maple syrup, chia seeds, vanilla bean paste, ground cinnamon, and a pinch of salt. Stir well to ensure all ingredients are evenly incorporated.
  2. Portion and Refrigerate: Divide the oat mixture evenly into four 8-ounce glass jars or containers with lids. Seal the containers tightly and place them in the refrigerator to set for at least 4 hours, preferably overnight, to allow the oats and chia seeds to absorb the liquid fully and develop a creamy texture.
  3. Serve with Toppings: When ready to eat, remove the jars from the refrigerator and top each serving with pistachio cream, additional chopped pistachios, and fresh fruit if desired for added flavor and texture.

Notes

  • Pistachio milk provides the most authentic pistachio flavor, but almond, oat, or dairy milk can be used as alternatives.
  • The oats require a minimum of 4 hours to soak, though overnight soaking offers the creamiest consistency.
  • For an extra flavor boost, swirl in pistachio cream or a spoonful of nut butter right before serving.
