Pistachio Filled Dates are a delightful treat featuring soft, caramel-like Medjool dates stuffed with a creamy homemade pistachio filling and topped with rich, melted dark chocolate. This recipe offers a healthier twist on traditional Dubai chocolate dates, skipping kataifi and tahini while delivering a perfect balance of sweet, nutty, and chocolatey flavors.   • 12 large Medjool dates

Pistachio Cream Filling

  • 1 cup raw pistachios
  • 3 tablespoons sugar
  • ⅛ teaspoon salt
  • 2 tablespoons melted coconut oil

Chocolate Topping

  • ¾ cup semi-sweet chocolate chips
  • 1 tablespoon melted coconut oil
  • Chopped pistachios for topping

Instructions

  1. Flatten Dates: Using a small knife, carefully score one side of each Medjool date and remove the pits. Gently open the dates and arrange them in a single layer on a parchment-lined baking sheet, spacing them about 1–2 inches apart.
  2. Press Dates Flat: Place a second sheet of parchment paper on top of the dates and press down gently with the bottom of a measuring cup or drinking glass to flatten each date. Remove the top parchment paper carefully.
  3. Prepare Pistachio Cream: Warm 2 tablespoons of coconut oil until melted and hot. In a mini food processor, combine the raw pistachios, sugar, salt, and melted coconut oil. Process until the mixture is finely ground and creamy, creating a smooth pistachio filling.
  4. Melt Chocolate: In a microwave-safe bowl, combine the semi-sweet chocolate chips with 1 tablespoon of melted coconut oil. Microwave in 20-second intervals, stirring between each, until the chocolate is completely melted and smooth.
  5. Assemble Dates: Spread about 1 to 2 tablespoons of the pistachio cream over each flattened date. Drizzle or spoon the melted chocolate on top, covering just the tops to allow the pistachio filling to be visible from the sides.
  6. Garnish: Sprinkle chopped pistachios and a pinch of flaky sea salt over the chocolate-coated dates for added texture and flavor.
  7. Chill and Serve: Refrigerate the dates on the baking sheet for at least 2 hours, or until the chocolate has fully set. Keep stored in the refrigerator in an airtight container until ready to enjoy.

  • Use raw, unsalted pistachios for the best natural flavor and creamy texture. Avoid pre-roasted or salted nuts.
  • Soft Medjool dates are preferable due to their size and pliability, but Noor dates can be substituted if needed.
