Ingredients

Dressing

  • 2 tablespoons honey
  • 2 tablespoons rice vinegar
  • 1 tablespoon fresh lime juice (about 1 lime)
  • 1/4 teaspoon chili oil
  • 1/2 teaspoon coarse salt

Salad

  • 1 & 1/2 cups diced fresh pineapple
  • 1 small Persian cucumber, diced
  • 1/3 cup diced red onion
  • 1/4 cup chopped fresh cilantro

Instructions

  1. Prepare the dressing: In a large bowl, whisk together 2 tablespoons honey, 2 tablespoons rice vinegar, 1 tablespoon lime juice, 1/4 teaspoon chili oil, and 1/2 teaspoon coarse salt to create a balanced sweet, tangy, and slightly spicy dressing.
  2. Dice ingredients: Dice 1 & 1/2 cups of fresh pineapple, 1 small Persian cucumber, 1/3 cup of red onion, and chop 1/4 cup of fresh cilantro to add fresh, crisp textures and vibrant flavors to the salad.
  3. Combine salad and dressing: Add the diced pineapple, cucumber, red onion, and cilantro to the bowl with the dressing and gently toss everything together until well coated and evenly mixed.
