Ingredients

Pickling Brine

  • 2 Cups Apple cider vinegar
  • 2 Cups Water
  • 1 Cup White granulated sugar
  • 1 tablespoon Black mustard seeds
  • 1 tablespoon Chili flakes
  • ½ teaspoon Salt

Instructions

  1. Prepare Ingredients: Cut the pineapple into bite-sized cubes. Slice the jalapeños and finely chop the fresh ginger to prepare for the pickling brine.
  2. Make Pickling Brine: In a heavy-bottomed pan, combine apple cider vinegar, water, white granulated sugar, black mustard seeds, chili flakes, salt, and the chopped ginger. Bring the mixture to a boil, stirring occasionally to dissolve the sugar completely.
  3. Add Pineapple and Jalapeños: Once the brine is boiling and the sugar is dissolved, add the sliced jalapeños and pineapple cubes to the pot.
  4. Simmer the Mixture: Bring the mixture back to a boil, then reduce the heat and let it simmer gently for 10 minutes, allowing the flavors to meld and the pineapple to soften slightly.
  5. Taste and Adjust: Taste the mixture for sweetness and spice level; if desired, add more sugar to balance the flavor. Stir well to incorporate any additions.
