  • 1/3 cup grated Parmesan cheese
  • 3 tablespoons herb seasoning (divided, any brand; Mrs. Dash recommended)
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 lbs red potatoes (washed)
  • Nonstick cooking spray

Instructions

  1. Prepare the butter: Add 1 stick of butter to a 9×13 baking pan.
  2. Melt the butter: Place the baking pan into a cool oven, then turn the oven on to 400°F and allow the butter to melt as the oven preheats.
  3. Remove pan: Once the butter has melted, remove the pan from the oven.
  4. Prep potatoes: Meanwhile, cut the washed red potatoes in half and score each cut side with shallow cuts to help flavor soak in and promote crispiness.
  5. Make seasoning mixture: In a small bowl, combine the grated Parmesan cheese, 2 tablespoons of herb seasoning, salt, and black pepper; mix well.
  6. Add seasoning to butter: Sprinkle the seasoning mixture evenly over the bottom of the pan, mixing into the melted butter.
  7. Arrange potatoes: Place the potatoes cut side down directly on top of the seasoned butter mixture in the baking pan.
  8. Season the tops: Spray the tops of the potatoes with nonstick cooking spray and sprinkle with the remaining 1 tablespoon of herb seasoning for extra flavor.
  9. Bake: Bake the potatoes uncovered at 400°F for 40 minutes or until they are tender and golden brown.
