Ingredients

Pizza Dough

  • recipe Classic Pizza Dough

Garlic Butter

  • 6 tablespoons butter
  • 2 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • ¼ teaspoon kosher salt, heaping

Toppings & Dipping

  • ⅓ cup grated Parmesan cheese
  • ½ cup marinara sauce for dipping

Instructions

  1. Prepare the Dough: If using refrigerated pizza dough, remove it from the fridge and let it sit in its bag at room temperature for about one hour to warm up and become easier to handle.
  2. Shape and Cut: On parchment paper, divide the dough into four equal portions. Roll one portion into a rope approximately 10 inches long. Use a pizza cutter or sharp knife to slice it into 10 roughly one-inch pieces. Repeat with the remaining dough pieces, then evenly space all bites on a rimmed, greased baking sheet.
  3. Proof the Dough: Cover the baking sheet with a clean tea towel and allow the dough bites to rise for 30 minutes until slightly puffed.
  4. Preheat Oven and Prepare Pan: Preheat your oven to 400°F (200°C). Generously spray a rimmed baking sheet with cooking spray to prevent sticking.
  5. Make Garlic Butter: Melt butter in a microwave-safe bowl and stir in minced garlic, Italian seasoning, and kosher salt until well combined.
  6. First Brush: Brush half of the garlic butter mixture over the tops of the dough bites, reserving the other half for after baking.
  7. Bake: Bake the bites in the preheated oven for 15 minutes until lightly golden. Avoid overbaking to keep them soft.
  8. Second Brush and Cheese: Remove the bites from the oven. Brush half of the bites with half of the remaining garlic butter and sprinkle with half the Parmesan cheese so it sticks to the wet butter. Repeat with the remaining bites and cheese.
  9. Serve: Serve warm with your favorite marinara sauce or olive oil for dipping.

Notes

  • Allowing the dough to come to room temperature improves ease of handling and rise quality.
  • Do not overbake to keep bread bites soft and tender.
  • Brushing the garlic butter in two stages helps the Parmesan stick better and gives more flavor coverage.
  • These bites are best served fresh but can be reheated gently in the oven.
