Seasoning & Oil

  • 3 tablespoons olive oil
  • ½ teaspoon paprika

  • ½ teaspoon salt

Instructions

  1. Preheat Oven and Prepare Pans: Preheat your oven to 425°F (220°C). Line two baking sheets with parchment paper. Using light-colored pans is preferable for the best results to prevent excessive browning.
  2. Slice Potatoes Thinly: Using a mandolin, slice the russet potatoes into thin rounds slightly less than ⅛-inch thick. If you don’t have a mandolin, carefully use a sharp knife, although this will take more time and precision.
  3. Rinse and Soak Potatoes: Rinse the potato slices in cold water until the water runs clear, using your hands to separate the slices and remove excess surface starch, which is key for crispiness. Then soak the slices in fresh water for 15 to 30 minutes.
  4. Dry the Potatoes: Drain the soaked potatoes and thoroughly dry them using a clean kitchen towel. Also dry the bowl used for soaking to prevent moisture from remaining, which can reduce crispiness during baking.
  5. Toss with Oil and Seasonings: Return the dried potato slices to the dry bowl. Add the olive oil, paprika, garlic powder, salt, and black pepper. Toss gently with your hands to evenly coat all slices in the seasoning mixture.
  6. Arrange and Bake: Spread the potato slices in a single layer on the prepared baking sheets, making sure none are touching or overlapping. Bake for 20 to 25 minutes, flipping the chips halfway through the baking time to ensure even crisping.
  7. Cool and Serve: Once the chips are golden and crispy, remove them from the oven and let them cool slightly to firm up before serving.
