This One Pot Creamy Pesto Pasta is a quick and easy vegetarian recipe perfect for a flavorful weeknight dinner. It combines tender pasta cooked right in a creamy, herby pesto sauce with fresh spinach, cherry tomatoes, and aromatic garlic. Ready in just 25 minutes and minimal cleanup, this comforting dish provides rich flavors with a plant-based twist using oat cream and vegetable stock.

Ingredients

Pasta and Vegetables

  • 250 g tagliatelle or fettuccine
  • 1 cup cherry tomatoes, halved
  • 2 cups fresh spinach
  • A handful of fresh basil leaves
  • 3–4 garlic cloves, thinly sliced

Sauce and Seasonings

  • 4 tbsp green pesto
  • 1 tsp Italian seasoning
  • 1 cup oat cream (or other plant cream)
  • 1 cup vegetable stock
  • Salt & pepper to taste
  • Optional: chili flakes or vegan parmesan for topping

Instructions

  1. Layer ingredients in a wide pan: Add the pasta nests to the center of the pan. Arrange the halved cherry tomatoes on one side and the fresh spinach along with basil leaves on the other side. Scatter the thinly sliced garlic evenly over the ingredients.
  2. Season and flavor: Spoon the green pesto onto the center of the pasta. Sprinkle Italian seasoning, salt, pepper, and optionally chili flakes over everything to enhance the flavors.
  3. Pour in liquids: Carefully add oat cream and vegetable stock until the pasta is mostly covered to allow even cooking and a creamy sauce base.
  4. Cook covered: Cover the pan with a lid and cook over medium heat for about 10 to 12 minutes. Stir occasionally to ensure the pasta cooks evenly and does not stick to the bottom. Add a splash more vegetable stock if the mixture dries out before pasta is cooked.
  5. Create the sauce: When the pasta is al dente and the sauce has thickened, stir everything together thoroughly so the pesto, cream, and the juices from the tomatoes fully combine creating a rich and creamy sauce.
  6. Finish & serve: Taste and adjust the salt and pepper as needed. Serve the pasta hot with an extra sprinkle of chili flakes or vegan parmesan for added flavor and presentation.
