Ingredients

Wet Ingredients

  • 1 1/2 cups vegan buttermilk
  • 1 1/2 cups granulated sugar

Instructions

  1. Preheat and prepare pans: Preheat your oven to 350°F (175°C). Line two 8-inch cake pans with parchment paper to ensure easy removal of the cakes after baking.
  2. Mix wet ingredients: In a large mixing bowl, whisk together the granulated sugar, melted vegan butter, dairy-free yogurt, vanilla extract, and almond extract until the mixture is smooth and well combined.
  3. Add dry ingredients: To the wet mixture, add the ground almonds, all-purpose flour, baking powder, baking soda, and sea salt. Gradually pour in the vegan buttermilk while gently mixing until just combined to avoid overmixing the batter.
  4. Divide batter and bake: Evenly divide the cake batter between the two prepared pans. Place in the preheated oven and bake for 40 to 42 minutes, or until a toothpick inserted into the center comes out clean.
  5. Cool the cakes: Allow the cakes to cool in their pans for 10 minutes. Then, carefully transfer them to a wire cooling rack to cool completely before frosting.
