  • 1 cup peanuts, chopped
  • 3 tablespoons peanut butter
  • 3 tablespoons honey (or more if needed)
  • 1 cup peanut butter, melted

Topping

  • 12 oz. dark chocolate, finely chopped
  • 1 tablespoon coconut oil

Instructions

  1. Combine Ingredients: In a mixing bowl, combine granola, chopped peanuts, 3 tablespoons of peanut butter, and 3 tablespoons of honey. Mix well to form a sticky mixture. If it feels too dry, add more honey gradually until the mixture holds together well.
  2. Form Granola Cups: Grease a cupcake pan to prevent sticking. Divide the granola mixture evenly into 12 cups. Press firmly to shape and compact the mixture, then create a small dent or well in the center of each cup for the filling. Place the pan in the freezer for 5-10 minutes to allow the cups to firm up.
  3. Fill with Melted Peanut Butter: Melt 1 cup of peanut butter until smooth. Pour the melted peanut butter carefully into the center dent of each granola cup. Return to the freezer for another 5-10 minutes to let the peanut butter set.
  4. Prepare and Add Chocolate Topping: Melt the dark chocolate with 1 tablespoon of coconut oil using a double boiler or microwave in short bursts, stirring frequently until smooth. Spoon the melted chocolate over the peanut butter layer to cover the top of each cup evenly. Chill the cups in the refrigerator until the chocolate topping has fully set.
  5. Storage: Store the granola cups in an airtight container in the refrigerator for up to a week, or freeze them for longer storage.
