Celebrate Independence Day with this festive No-Bake 4th of July Icebox Cake that layers colorful red, white, and blue creamy fillings with crunchy graham crackers. This easy-to-make dessert requires no baking and is perfect for summertime gatherings, combining white chocolate or cheesecake instant pudding with Cool Whip, topped with fun patriotic sprinkles.

Ingredients

For the Cake Layers

  • 2 boxes of Graham Crackers
  • 2 (8 oz) tubes of Cool Whip
  • 2 boxes of White Chocolate or Cheesecake Instant Pudding (prepared as per package instructions)
  • Red Food Coloring
  • Blue Food Coloring

For the Topping

  • 2 containers of White Frosting
  • Patriotic Sprinkles (optional but recommended)

Instructions

  1. Prepare the pudding: Follow the package directions to prepare the instant pudding until set and smooth.
  2. Mix pudding and whipped topping: In a large bowl, combine the prepared pudding with both tubes of Cool Whip, mixing thoroughly until smooth and well combined.
  3. Divide filling: Separate the creamy mixture evenly into two bowls.
  4. Add red food coloring: Gradually add red food coloring to one bowl, mixing until the red hue reaches your preferred shade.
  5. Layer graham crackers: In a 13 x 9-inch casserole dish, place an even layer of graham crackers on the bottom. It’s fine if the crackers break to fill the space.
  6. Add red filling: Pour half of the red-colored filling over the cracker layer and smooth it evenly.
  7. Add next cracker layer and white filling: Place another layer of graham crackers on top, then pour half of the white (uncolored) filling over it and smooth out.
  8. Repeat layers: Repeat the layering process again with graham crackers and the remaining red and white fillings, finishing with a final graham cracker layer on top.
  9. Prepare blue frosting: Add about five drops of blue food coloring to each container of white frosting and stir until evenly blue.
  10. Warm frosting: Place both tubs of blue frosting in the microwave for 1 minute to soften for easier spreading.
  11. Top with blue frosting: Pour one and a half tubs of the blue frosting over the final graham cracker layer and smooth it evenly. Discard any unused frosting.
  12. Add sprinkles and chill: Sprinkle the top with patriotic sprinkles if desired, then cover and place the cake in the freezer.
  13. Freeze to set: Freeze the icebox cake for at least 4 hours, or preferably overnight, to allow flavors to meld and the cake to firm up before serving.

Notes

  • Be sure your casserole dish is at least 13 x 9 inches and 3 quarts in volume to accommodate all layers.
  • If you prefer a different shade of red or blue, add food coloring gradually and mix thoroughly to reach your desired color intensity.
  • This dessert is best served chilled directly from the freezer, but let sit for a few minutes at room temperature before serving for easier slicing.
  • Patriotic sprinkles are optional but add a festive, colorful finishing touch perfect for 4th of July celebrations.
