Ingredients

Brownies

  • 1/2 cup all-purpose flour
  • 3/4 cup unsweetened cocoa powder
  • 1 1/2 cups granulated sugar
  • 1 1/4 cups unsalted butter, melted
  • 1 1/2 cups dark chocolate, melted
  • 6 large eggs
  • 1 cup white chocolate chips
  • 1 cup dark chocolate chips

Frosting

  • 1 1/4 batches American buttercream frosting
  • 1/4 cup cocoa powder
  • 2 tbsp milk
  • 10 drops black food gel
  • 3 drops teal food gel + 3 drops yellow food gel (green frosting)
  • 2 drops yellow food gel (light yellow frosting)
  • 5 drops yellow food gel (yellow frosting)
  • 10 drops red food gel (red frosting)
  • 10 drops purple food gel + 5 drops pink food gel (purple frosting)

Decoration

  • 20 cm roll of licorice

Instructions

  1. Prepare the frosting: Divide the buttercream frosting into 7 portions. Mix 2 portions with teal and yellow food gel to create green frosting. Mix 1 portion with cocoa powder, milk, and black food gel for black frosting. Dye one portion light yellow, another half portion yellow, another half portion red, 1 portion purple with purple and pink gels, and leave one portion white.
  2. Preheat oven and prepare pan: Preheat fan-forced oven to 175C (340F). Spray a 32cm x 24cm baking tin with non-stick spray and line with parchment paper.
  3. Melt chocolate and butter: In a microwave-safe bowl, microwave butter and dark chocolate for 20 seconds at a time, stirring until smooth and combined.
  4. Mix batter: Add sugar to melted chocolate mixture and whisk well, then whisk in eggs. Add cocoa powder and flour, fold with spatula. Stir in white and dark chocolate chips until combined.
  5. Bake brownies: Pour batter into prepared tin and bake for 30 minutes or until a pick inserted comes out with moist crumbs. Cool at room temperature for 1 hour, then refrigerate for 1 hour.
  6. Cut brownies: Use a 2½ inch square cookie cutter to cut 12 brownie squares.
  7. Decorate Frankenstein brownies: Pipe green frosting square border on 6 brownies using Wilton #8 tip, smooth with offset spatula. Use Wilton #3 tip with black frosting to pipe mouth, eyes, monobrow, and stitches on mouth. Fill eyes with yellow frosting inside and black frosting for pupils. Insert small licorice pieces at sides as detail. Set aside 3 brownies for use in mummy decoration.
  8. Decorate Mummy brownies: Use green-frosted brownies. Pipe light yellow frosting with Wilton 2B tip in lines across brownies. Use black frosting #3 tip to pipe round eyes, pipe yellow frosting inside eyes, then fill with black for pupils.
  9. Decorate Spider Monster brownies: Pipe purple frosting border on 3 brownies with Wilton #8 tip and smooth edges. Use black frosting #3 tip to pipe smile, and red frosting #3 tip for fangs. Use green frosting #3 tip to pipe eyes. Attach long licorice pieces on sides as spider legs.
  10. Decorate Dracula brownies: Use two piping bags fitted with Wilton #8 tips filled with black and white frosting. Pipe a widow’s peak on top of last 3 brownies with black frosting, fill remainder with white frosting. Create eyes following mummy brownies steps and finish mouth like spider brownies with black and red frosting details.

Notes

  • Ensure brownies are completely chilled before cutting and decorating to maintain shape.
  • Use gel food coloring for vibrant frosting colors that won’t thin consistency.
  • If preferred, licorice pieces can be substituted with candy sticks or pretzel rods for decoration.
  • For best results, use high-quality cocoa and chocolate chips to enhance flavor and texture.
  • Allow decorated brownies to set for at least 30 minutes before serving to let frosting firm up.
