  • 2 teaspoons smoked paprika
  • 2 teaspoons oregano
  • 1 teaspoon cayenne chili pepper
  • Salt & pepper, to taste
  • 300ml vegetable stock
  • 150ml heavy cream
  • 30g hard cheese (such as Parmesan), grated
  • 2 x 400g tins butter beans, drained
  • 1 handful fresh basil, shredded
  • 1 cup spinach, chopped

Instructions

  1. Sauté Shallots: Heat the oil from the sun-dried tomato jar in a pan over medium heat. Add the diced shallots and sauté for 7-8 minutes until they are soft and translucent.
  2. Add Garlic and Tomatoes: Add the minced garlic and cook for an additional minute until fragrant. Then stir in the finely diced sun-dried tomatoes and tomato paste, combining well with the shallots and garlic.
  3. Season and Simmer: Add the garlic powder, onion powder, smoked paprika, oregano, cayenne chili pepper, salt, and pepper to the pan. Stir everything together, then pour in the vegetable stock and drained butter beans. Reduce the heat to low and allow the mixture to simmer for 5-10 minutes until the sauce thickens slightly.
  4. Add Spinach: Stir in the chopped spinach and cook until it wilts into the sauce, about 1-2 minutes.
  5. Finish with Cream and Cheese: Swirl in the heavy cream, then grate the hard cheese over the dish and stir to melt it into the sauce. Adjust seasoning to taste. Scatter the shredded fresh basil on top for a fresh, aromatic finish.
  6. Serve: Serve the creamy butter beans hot with crusty bread to mop up the flavorful sauce.
