  • 1.5 pounds Ripe Tomatoes

Marinade

  • 6 tablespoons Extra Virgin Olive Oil
  • 2 tablespoons Red Grape Vinegar
  • ⅓ cup Red Onion, finely chopped
  • 1 clove Garlic, minced
  • 2 teaspoons Basil, chopped
  • 2 teaspoons Parsley, finely chopped
  • 1 teaspoon Dill, finely chopped
  • Salt and Freshly Ground Pepper to taste

Instructions

  1. Prepare Tomatoes: Rinse the ripe tomatoes thoroughly, then pat them dry with a clean towel. Slice the tomatoes into approximately ⅓ inch thick slices and arrange them neatly in a large, shallow dish to ensure even marination.
  2. Make Marinade: In a separate bowl, whisk together the extra virgin olive oil, red grape vinegar, finely chopped red onion, minced garlic, chopped basil, parsley, dill, and season with salt and freshly ground pepper. Mix until well combined.
  3. Combine and Marinate: Pour the prepared marinade evenly over the arranged tomato slices, making sure all pieces are well coated. Spread the marinade to cover every slice.
  4. Refrigerate: Cover the dish with plastic wrap or a lid and place it in the refrigerator. Allow the tomatoes to marinate for at least 2 hours so they can absorb all the fresh flavors of the herbs and marinade, flipping them once halfway through for even soaking.
