Marias S’mores Cookie Pops are a fun and easy treat combining classic Marias cookies, melted chocolate, and fluffy marshmallow fluff, all decorated with colorful sprinkles and served on popsicle sticks. Perfect for parties or a delightful snack, these no-bake cookie pops require minimal preparation and chilling time.

Ingredients

Ingredients

  • 1/2 cup semi-sweet chocolate chips
  • 20 Marias Style Cookies
  • 3/4 cup marshmallow fluff
  • sprinkles or nonpareils, for decoration
  • popsicle sticks

Instructions

  1. Prepare the workspace: Line a large tray or plate with wax paper and set it aside to use for placing the cookie pops after dipping.
  2. Melt the chocolate: Place the semi-sweet chocolate chips in a microwave-safe bowl. Heat in the microwave for 45 seconds, then stir well until the chocolate is smoothly melted and completely melted down. Set aside to keep warm.
  3. Assemble the cookie pops: Spread about 2 teaspoons of marshmallow fluff on the smooth backside of one Marias cookie. Place a popsicle stick onto the marshmallow fluff spread. Then, cover it with a second cookie to form a sandwich resembling a lollipop on a stick.
  4. Dip in chocolate and decorate: Hold the cookie sandwich by the cookie part (not the stick) and dip it halfway into the melted chocolate. Immediately sprinkle with nonpareils or sprinkles for decoration. Place the dipped cookie pop on the wax-paper-lined tray to set. Repeat this process for all cookie sandwiches.
  5. Chill to set: Refrigerate the cookie pops for about 15 minutes or until the chocolate coating has completely set. Once set, gently lift the pops from the wax paper by the stick and enjoy your delightful s’mores cookie pops!

Notes

  • Use good quality semi-sweet chocolate chips for the best flavor and smooth melting.
  • Handle the cookie pops carefully when dipping to avoid breaking the stick or sandwich.
  • You can customize the sprinkles or nonpareils to fit a holiday theme or personal preference.
  • Store cookie pops in an airtight container in the refrigerator to keep them fresh longer.
  • If marshmallow fluff is unavailable, you can use mini marshmallows melted slightly and spread as a substitute.
