Ingredients

Salmon

  • 4 salmon fillets, skin on or skinless
  • 1 teaspoon garlic powder
  • Kosher salt and pepper, to taste
  • 1 tablespoon olive oil

Glaze

  • 1 tablespoon olive oil or avocado oil
  • 2/3 cup pecans, chopped
  • 1/3 cup maple syrup
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon Dijon mustard

Instructions

  1. Preheat Oven: Preheat your oven to 400ºF (200ºC) to prepare for baking the salmon fillets.
  2. Prepare Salmon: Rub the salmon fillets with garlic powder, kosher salt, pepper, and olive oil to season them evenly.
  3. Bake Salmon: Place the seasoned salmon fillets in a rectangular baking dish and bake in the preheated oven for 12-15 minutes, or until the salmon is flaky and cooked through.
  4. Toast Pecans: While the salmon bakes, heat 1 tablespoon of olive oil in a small pan over medium heat. Add chopped pecans and cook, stirring frequently, until they begin to darken and become fragrant, about 3-4 minutes.
  5. Make Glaze: Stir in the maple syrup, apple cider vinegar, and Dijon mustard to the toasted pecans. Let the mixture bubble and cook for 3-4 minutes until it thickens enough to coat the back of a spoon.
  6. Glaze Salmon: When the salmon is done baking, remove it from the oven and generously spoon the warm maple pecan glaze over each fillet.
  7. Garnish and Serve: Optionally, garnish with freshly chopped parsley for a burst of color and flavor. Serve immediately while warm.

Notes

  • Store leftover salmon in an airtight container in the refrigerator for up to 3 to 4 days.
  • To reheat, place salmon in a dish and heat in the oven at 300ºF for about 10 minutes to maintain a crispy exterior and tender interior.
