A vibrant and refreshing Mango Salad tossed with a tangy and sweet Sweet Chilli Lime Dressing, featuring ripe mangoes, creamy avocado, crunchy cucumber, and fresh coriander, topped with crushed peanuts for an added crunch. Perfect for a light, healthy meal or a colorful side dish, ready in just 15 minutes.

Ingredients

Dressing

  • 3 tbsp sweet chilli sauce
  • 2 tsp all-purpose soy sauce or tamari
  • 2 limes, juiced
  • 1 tbsp olive oil
  • 1 tsp honey or maple syrup
  • ½ tsp freshly grated ginger
  • Sea salt flakes, to taste
  • Freshly cracked black pepper, to taste

Salad

  • 2 ripe mangoes, peeled and diced
  • 1 avocado, peeled, pitted and diced
  • ½ small red onion, finely sliced
  • 1 small cucumber, halved lengthways, then sliced
  • 30 g coriander (cilantro) leaves, roughly chopped
  • 40 g crushed peanuts

Instructions

  1. Make the dressing: In a small bowl, whisk together the sweet chilli sauce, soy sauce or tamari, fresh lime juice, olive oil, honey or maple syrup, and grated ginger until well combined. Season with sea salt flakes and freshly cracked black pepper to taste.
  2. Assemble the salad: In a shallow serving bowl, arrange the diced mango, sliced cucumber, diced avocado, finely sliced red onion, and roughly chopped coriander leaves in layers, maintaining a visually appealing presentation.
  3. Dress the salad and serve: Drizzle the sweet chilli lime dressing evenly over the layered salad. Sprinkle the crushed peanuts on top. For best presentation, toss gently just before serving to evenly coat the salad with the dressing while preserving the layers.

Notes

  • Use ripe but firm mangoes to ensure good texture.
  • Maple syrup can be substituted for honey to make the dressing vegan.
  • If you prefer less spice, reduce or omit the sweet chilli sauce.
  • This salad is best served fresh to maintain the vibrant colors and textures.
  • For added protein, consider adding grilled chicken or shrimp as a topping.
