Made with almond flour and sugar-free chocolate, these cookies offer a deliciously soft texture with golden edges, baked to perfection in just 18 minutes. Ideal for a quick snack or dessert, they satisfy sweet cravings without the carb overload.

Ingredients

Dry Ingredients

  • 1 cup almond flour
  • 3 tbsp granulated sweetener
  • 1 tsp vanilla extract

Wet Ingredients

  • 1 medium egg (not large)
  • 2 tbsp double/heavy cream
  • 2 tbsp unsalted butter (VERY soft)

Mix-ins

  • 1/3 cup chopped dark chocolate (50g; 85% cocoa solids minimum or sugar free), or sugar free chocolate chips

Instructions

  1. Preheat Oven: Preheat your oven to 180°C (350°F) to ensure it’s at the correct temperature for baking your cookies evenly.
  2. Mix Ingredients: Combine the almond flour, granulated sweetener, vanilla extract, egg, heavy cream, and very soft unsalted butter with a fork until a dough forms. Allow the dough to rest for a few minutes so the flour fully absorbs the moisture, helping with the texture.
  3. Add Chocolate: Chop your dark chocolate or sugar-free chocolate chips if not pre-chopped, then stir them into the dough evenly to distribute the chocolate throughout the cookies.
  4. Shape Cookies: Using your hands or a spoon, form the dough into balls and place them on a baking sheet lined with baking paper. Press each ball down to approximately 1/2 cm thickness to get the right shape and bake time.
  5. Bake: Bake the cookies in the preheated oven for about 13 minutes or until the edges turn golden. The cookies will be soft immediately after baking but will firm up as they cool down. Let them cool before serving for best texture.
