Ingredients

Pasta

  • 8 ounces spaghetti (sub legume-based for gluten free)

Garlic Scape Sauce

  • 1.5 cups chopped garlic scapes (about 2 bunches, cut into 1-inch pieces)
  • 3 tbsp extra virgin olive oil (divided)
  • 1 tbsp butter
  • 3 tbsp lemon juice (divided)
  • 2 tsp lemon zest (more to taste)
  • 1/2 cup freshly grated Parmigiano Reggiano (more to taste)
  • Salt (to taste)
  • Freshly ground black pepper (to taste)

Instructions

  1. Cook Pasta: Bring a large pot of salted water to a boil. Add the spaghetti and cook according to package directions until al dente. Reserve at least 1/2 cup of the pasta water before draining the pasta.
  2. Prepare Garlic Scapes: While the pasta cooks, heat 1 tablespoon of olive oil in a medium skillet over medium heat. Add the chopped garlic scapes and sauté for 7 to 9 minutes, stirring occasionally, until they become tender and lightly browned. Stir in the butter and 1 tablespoon of lemon juice, allowing the butter to melt and infuse the garlic scapes with citrus flavor.
  3. Combine Pasta and Sauce: Return the drained spaghetti and the sautéed garlic scapes to the pot used for cooking the pasta. Add the remaining 2 tablespoons of olive oil, the remaining 2 tablespoons of lemon juice, lemon zest, freshly grated Parmesan cheese, salt, and freshly ground black pepper. Toss everything together, adding reserved pasta water in small splashes as needed to loosen the sauce and achieve the desired consistency.
