Lemon Cream Pudding Layer

  • 1/4 teaspoon turmeric (for color)
  • 1/2 teaspoon lemon extract

Instructions

  1. Prepare the chia pudding: In a bowl, mix all the chia pudding layer ingredients—chia seeds, oat milk, lemon zest, maple syrup, vanilla extract, and sea salt. Whisk thoroughly for about a minute until well combined.
  2. Set the chia pudding: Transfer the chia pudding mixture to the fridge and let it set for about 3 hours or overnight until it thickens into a pudding consistency.
  3. Soak the cashews: Ensure your cashews have been soaked for 1 hour in boiling hot water or overnight in room-temperature water, then drain them completely.
  4. Make the lemon cream layer: Combine all the lemon cream pudding ingredients—soaked cashews, oat milk, maple syrup, lemon juice, turmeric, and lemon extract—in a blender. Blend on high speed until the mixture is silky smooth and creamy.
  5. Assemble the pudding jars: Evenly divide the set chia pudding into 4 small jars or containers.
  6. Add the lemon cream topping: Pour the blended lemon cream pudding evenly over each jar’s chia pudding layer.
  7. Chill: Place the jars back in the fridge for at least 3 more hours to let the lemon cream layer firm up.
