Lemon basil hummus is a vibrant and refreshing dip that combines the creamy texture of chickpeas with fresh basil leaves and a zesty lemon flavor.   • 1 can chickpeas, rinsed and drained
  • 2 cups fresh basil leaves, packed
  • ½ cup tahini
  • 2 tbsp olive oil
  • 4 tbsp lemon juice
  • 8 cloves garlic, minced
  • ½ tsp salt
  • ¼ cup water

Instructions

  1. Prepare chickpeas: Rinse and drain your chickpeas thoroughly to remove any canning liquid and excess sodium.
  2. Add ingredients to blender: Place all ingredients except the water into the blender. Arrange so that the chickpeas and the wet ingredients are closest to the blade, and the basil leaves are on top, furthest away from the blade.
  3. Start blending: Begin pulsing or blending on low speed to combine the ingredients gently without splashing.
  4. Add water gradually: Slowly pour water into the blender while blending, or in between pulses if your blender lid does not have a hole for pouring liquids.
  5. Blend to smooth consistency: Continue blending until you achieve a smooth, spreadable texture with no large chunks remaining.
  6. Serve and enjoy: Transfer the hummus to a serving bowl and enjoy as a dip, spread, or snack. Optionally garnish as desired.

Notes

  • Not vegan? Add parmesan cheese into the blender or sprinkle on top for extra flavor.
  • For more protein, include pine nuts or pumpkin seeds before blending.
  • To make oil-free, omit olive oil and increase water slightly when blending to maintain creaminess.
