These Leftover Mashed Potato Puffs are a delicious and easy way to transform your leftover mashed potatoes into cheesy, savory mini bites packed with breakfast sausage and chives. Perfect as a party appetizer, snack, or side dish, they bake up golden and crispy on the outside while staying soft and flavorful inside. With just a few simple ingredients and a mini muffin pan, you can whip up 24 delightful puffs in about 30 minutes.

Ingredients

Mashed Potato Mixture

  • 2 cups leftover mashed potatoes
  • 1 cup cooked breakfast sausage (about 8 ounces)
  • 3/4 cup grated cheese (cheddar recommended)
  • 2 large eggs
  • 2 tablespoons minced chives
  • Optional: salt and pepper, to taste (only if mashed potatoes are under seasoned)

Instructions

  1. Preheat and Prepare Pan: Heat your oven to 400°F (204°C). Spray a mini muffin pan with non-stick spray or lightly coat the cups with olive oil to prevent sticking.
  2. Season Mashed Potatoes: Taste your leftover mashed potatoes to check seasoning levels. If they are under seasoned, add salt and pepper accordingly to enhance the flavor.
  3. Mix Ingredients: In a large bowl, combine the mashed potatoes, cooked breakfast sausage, grated cheese, eggs, and minced chives. Mix thoroughly until all components are evenly incorporated.
  4. Fill Muffin Cups: Using a mini scoop or spoon, place a generous scoop of the potato mixture into each cup of the mini muffin pan. The mixture will not expand much, so feel free to completely fill each cup.
  5. Bake: Place the muffin pan in the preheated oven and bake for 25 minutes, or until the puffs are golden brown on top and set.
  6. Serve or Store: Serve the puffs immediately while warm. Alternatively, store them in an airtight container in the refrigerator for up to 5 days. For freezing instructions, follow the directions provided in the full post.

Notes

  • Use cheddar or your favorite melting cheese for best flavor.
  • Make sure the breakfast sausage is fully cooked before adding to the mixture.
  • You can add herbs like parsley or thyme for extra flavor.
  • These puffs can be frozen after baking; cool completely, freeze on a tray, then transfer to a freezer bag. Reheat in the oven for best results.
  • Use a mini cookie scoop to evenly portion the mixture.
