This Korean zucchini side dish features thinly sliced zucchini quickly sautéed with garlic, green onions, and toasted sesame oil and seeds. The zucchini is salted beforehand to draw out excess moisture, then briefly sautéed to maintain a tender yet slightly crisp texture.

Ingredients

Zucchini Preparation

  • 30 oz zucchini (4 medium size)
  • 2.5 tsp coarse sea salt

Flavorings and Garnish

  • 0.4 oz garlic clove (2 large cloves, finely minced)
  • 2 bulb green onions (chopped, plus more for garnish)
  • 1 tbsp avocado oil
  • 23 tsp toasted sesame oil (plus more for garnish)
  • 1 tbsp toasted white sesame seeds (plus more for garnish)

Instructions

  1. Slice: Trim away both ends of the zucchini and use a mandoline slicer to slice the zucchini into thin, round discs.
  2. Salt: Place the zucchini slices in a large mixing bowl, sprinkle with coarse sea salt, and gently rub the salt into each slice with your hands. Set aside for about 20 minutes to draw out excess moisture.
  3. Mince: While waiting, finely mince the garlic and chop the green onions.
  4. Squeeze: After 20 minutes, gently squeeze the zucchini slices with your hands to remove the extra water and place them on a large plate.
  5. Sauté zucchini: Preheat a large sauté pan over medium heat until warm. Add avocado oil, increase heat to medium-high, and add the zucchini. Sauté for 1 minute.
  6. Sauté aromatics: Add the minced garlic, chopped green onions, toasted sesame oil, and toasted white sesame seeds to the pan with zucchini. Sauté for an additional 1 minute, then turn off the heat.
  7. Serve: Transfer the zucchini to a serving plate and garnish with extra green onions, sesame seeds, and a drizzle of toasted sesame oil. Serve at room temperature or chilled.
