This Kale Feta Egg Bake is a quick and healthy breakfast or brunch dish featuring sautéed kale and onions layered with tangy feta cheese and marinara sauce, topped with perfectly baked eggs. Ingredients

Vegetables and Aromatics

  • 1 tablespoon extra virgin olive oil
  • 1/2 medium onion, chopped
  • 1 clove garlic, minced
  • 4 cups chopped kale
  • 1/4 teaspoon red pepper flakes

  • 1/2 cup marinara sauce or salsa
  • 1/4 cup crumbled feta cheese
  • 2 eggs
  • Salt & pepper, to taste
  • Cooking spray (for greasing ramekins)

Instructions

  1. Preheat Oven: Preheat your oven to 375°F (190°C) to prepare for baking the egg bakes.
  2. Sauté Aromatics: In a skillet over medium heat, warm the olive oil. Add the chopped onions and minced garlic, cooking for 3-4 minutes until they become soft and fragrant.
  3. Cook Kale: Add the chopped kale and red pepper flakes to the skillet. Continue cooking for another 2-3 minutes until the kale is wilted and bright green.
  4. Prepare Ramekins: Spray two oven-safe ramekins with cooking spray to prevent sticking. Spoon 2 tablespoons of marinara sauce or salsa evenly into the bottom of each ramekin.
  5. Layer Ingredients: Divide half of the kale and onion mixture between the ramekins, followed by half of the crumbled feta cheese. Spoon the remaining marinara sauce over, then add the rest of the kale mixture on top.
  6. Add Eggs and Season: Crack one egg into each ramekin, place the remaining feta cheese over the eggs, and season with salt and pepper to your liking.
  7. Bake: Place the ramekins in the preheated oven and bake for 12-15 minutes, until the eggs are cooked through but still have a slightly runny yolk.
