This vibrant Jamaican Steamed Cabbage recipe combines fresh vegetables with authentic Caribbean spices, steamed gently in a Dutch oven to retain natural flavors and nutrition. Ideal as a versatile side dish, it’s infused with coconut oil, thyme, garlic, pimento seeds, and a dash of heat from crushed red pepper flakes, delivering a deliciously tender and aromatic experience in just 18 minutes.

Ingredients

Oils and Fats

  • ½ tablespoon coconut oil (7ml)
  • ½ tablespoon vegan butter or additional coconut oil (7g)

Vegetables

  • 1 head of white cabbage, thinly sliced (about 1 lb or 450g)
  • ½ green bell pepper, sliced (100g)
  • ½ red bell pepper, sliced (100g)
  • large stalks scallions, sliced (35g)
  • ½ white or red onion, sliced (130g)
  • 1 carrot, julienned or shredded (60g)

Herbs and Spices

  • 1 bunch of thyme, tied together (15g)
  • 1 teaspoon pimento seeds (2g)
  • 4 cloves garlic, minced (12g)
  • 1 teaspoon sea salt (6g)
  • ¼ teaspoon ground black pepper (0.5g)
  • ¼ teaspoon crushed red pepper flakes

Instructions

  1. Prep the cabbage: Remove the outer leaves of the cabbage and discard or compost them. Cut off the base of the stem to allow the cabbage to stand upright. Wash thoroughly with cold water to clean.
  2. Slice the cabbage: Cut the cabbage in half. Place one half on its side and slice thinly at an angle from the middle down, rotating as needed to create even slices.
  3. Heat the Dutch oven: Place a Dutch oven or a high-sided pot over medium heat. Melt the coconut oil evenly to prepare for cooking.
  4. Assemble the ingredients: Add the sliced cabbage on top of the melted coconut oil, followed by the tied thyme, pimento seeds, bell peppers, scallions, onion, garlic, carrot, sea salt, ground black pepper, and crushed red pepper flakes. Place the vegan butter or extra coconut oil on top.
  5. Steam the vegetables: Cover the pot tightly and let the cabbage and vegetables steam for 7 to 8 minutes. The cabbage will begin to release water, cooking the vegetables tenderly.
  6. Stir and adjust seasoning: Remove the lid and stir the mixture well to combine all ingredients and evenly distribute heat and seasoning. Taste and adjust seasoning as preferred.
  7. Optional extra steaming: If you desire softer cabbage, cover again and steam for an additional 1 to 2 minutes, stirring fully before testing tenderness again.

  • Using a Dutch oven or a high-sided heavy pot is essential for effective steaming and even heat distribution.
