Ingredients

Skewers and Chicken

  • 15 wooden skewers, soaked in water for 30 minutes
  • 2 pounds boneless, skinless chicken breasts, cut into 1-inch cubes
  • 1 teaspoon kosher salt
  • ½ teaspoon black pepper
  • ½ teaspoon chili powder
  • 2 tablespoons extra virgin olive oil

Skewered Produce

  • 4 yellow peaches, quartered then halved (32 pieces)
  • 3 medium jalapeno peppers, halved, seeded, cut into chunks

Peach Glaze

  • ½ cup (160 g) peach preserves
  • 1 tablespoon extra virgin olive oil
  • 1 teaspoon soy sauce
  • 1 teaspoon apple cider vinegar
  • 1 teaspoon Dijon mustard
  • ½ teaspoon garlic, minced
  • ½ teaspoon kosher salt
  • ⅛ teaspoon black pepper
  • ⅛ teaspoon red pepper flakes

Instructions

  1. Season Chicken: In a large bowl, combine the cubed chicken breasts with kosher salt, black pepper, chili powder, and 2 tablespoons of extra virgin olive oil. Toss well until all chicken pieces are evenly coated with the seasoning mixture.
  2. Assemble Skewers: Take a soaked wooden skewer and thread the ingredients in the following order: peach piece, chicken cube, jalapeno chunk, chicken cube, jalapeno chunk, chicken cube, and finish with another peach piece. Repeat this assembly for all 15 skewers, adjusting the order as desired to fit your preference.
  3. Preheat Air Fryer: Turn on your air fryer and preheat it to 375°F (190°C) to ensure even cooking.
  4. Prepare Skewers for Cooking: Brush each assembled skewer generously with olive oil to prevent sticking during cooking. Place the skewers in a single layer in the air fryer basket. You may need to cook in batches depending on your air fryer size.
  5. Air Fry Skewers: Cook the skewers in the air fryer for 11-12 minutes, turning if necessary, until the chicken reaches an internal temperature of 165°F, indicating it is safely cooked through.
  6. Prepare Peach Glaze: While the skewers cook, combine peach preserves, olive oil, soy sauce, apple cider vinegar, Dijon mustard, minced garlic, salt, black pepper, and red pepper flakes in a medium saucepan. Stir the mixture well and warm it over medium heat until fully incorporated and heated through.
  7. Glaze the Skewers: Once the chicken skewers are cooked, remove them carefully from the air fryer and brush them generously with the warm peach glaze to add a beautiful, flavorful finish. Serve immediately while warm for the best taste experience.

Notes

  • Soaking wooden skewers prevents them from burning in the air fryer.
  • Ensure the chicken is cooked to 165°F internal temperature for safety.
  • Adjust jalapeno quantity to control the spiciness according to taste.
  • Peach preserves add natural sweetness and complement the spicy jalapenos perfectly.
  • These skewers can also be grilled on a barbecue or cooked in a conventional oven if an air fryer is unavailable.
