This spicy and creamy Jalapeño Corn Dip is a flavorful appetizer perfect for parties and gatherings. Made with cream cheese, pepper jack cheese, sweet corn, and fresh jalapeños, it is baked until bubbly and golden on top, served warm with crunchy Frito Scoops for dipping.

Ingredients

Dip Ingredients

  • 8 ounces cream cheese, softened
  • 8 ounces grated pepper jack cheese, plus extra for garnish (about 1/4 cup)
  • 2 cans (10.5 ounces each) sweet corn, drained
  • 1/2 cup finely chopped jalapeño peppers (34 jalapeños), plus a few slices for garnish
  • 1/2 teaspoon salt
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon ground black pepper

For Serving

  • Frito Scoops

Instructions

  1. Preheat Oven: Begin by preheating your oven to 375 degrees Fahrenheit. This ensures it reaches the perfect temperature for baking the dip.
  2. Prepare Baking Dish: Spray a 1.5-quart baking dish with cooking spray to prevent sticking. Set it aside while you prepare the dip mixture.
  3. Mix Ingredients: In a large bowl, combine the softened cream cheese, grated pepper jack cheese, drained sweet corn, finely chopped jalapeño peppers, salt, garlic powder, onion powder, and ground black pepper. Use a wooden spoon to thoroughly mix all the ingredients until well blended.
  4. Assemble Dip: Spread the mixed dip evenly into the prepared baking dish. Sprinkle approximately 1/4 cup of additional pepper jack cheese evenly over the top to create a cheesy crust when baked.
  5. Bake: Place the baking dish uncovered into the preheated oven. Bake for 30 to 40 minutes, or until the dip is bubbly and the cheese on top is lightly browned for a golden finish.
  6. Rest and Serve: Remove the dip from the oven and let it rest for a few minutes to set. Garnish with a few fresh slices of jalapeños for an extra pop of color and heat. Serve warm with Frito Scoops for dipping and enjoy.

Notes

  • You can adjust the number of jalapeños to control the spiciness to your preference.
  • For a smoother texture, you can mash the corn slightly before mixing.
  • If you prefer a milder dip, remove the seeds from jalapeños before chopping.
  • The dip can be prepared a day ahead and baked just before serving.
  • Serve with tortilla chips or Frito Scoops for best results.
