These Italian Quesadillas feature rotisserie chicken, fresh basil, mozzarella cheese, and pizza sauce melted inside crispy tortillas, making for a perfect easy meal or snack in just 11 minutes.

  • 16 oz rotisserie chicken, chopped or shredded
  • 2 tablespoons fresh basil, chopped or chiffonade
  • 1 cup part-skim mozzarella cheese
  • 1/2 jar pizza sauce (about 135 grams)

Instructions

  1. Heat skillet: Heat a skillet over medium-low heat. Spray with cooking spray or brush olive oil onto the skillet to prevent sticking.
  2. Place tortilla and add toppings: Place one tortilla on the skillet. On one half of the tortilla, spread the pizza sauce, then evenly add the chopped rotisserie chicken, fresh basil, and mozzarella cheese.
  3. Cook until cheese starts melting: Let the tortilla cook for a few minutes until the cheese begins to melt and the underside of the tortilla starts to brown and crisp.
  4. Fold the tortilla: Carefully flip the half of the tortilla without toppings onto the half with toppings, creating a half-moon shape.
  5. Cook and flip again: Allow the folded quesadilla to cook for another minute, then flip it over. Continue cooking until the tortilla is browned to your liking and the cheese is fully melted.
  6. Serve: Remove from skillet, cut into halves or quarters, and serve immediately while hot and melty.

  • Use medium-low heat to ensure the cheese melts thoroughly without burning the tortilla.
  • You can substitute rotisserie chicken with cooked shredded chicken or even turkey.
