Ingredients

Chicken and Marinade

  • 68 pieces chicken (thighs or breasts)
  • 1/2 cup Italian dressing
  • 1 small red bell pepper, sliced

Seasonings

  • 2 teaspoons paprika
  • 1 teaspoon garlic powder

Instructions

  1. Marinate the Chicken: In a large bowl, add the chicken pieces and pat them dry. Add the sliced red and green bell peppers along with the sliced yellow onion. Pour the Italian dressing over the chicken and vegetables. Sprinkle paprika, garlic powder, onion powder, Italian seasoning, adobo seasoning, and salt evenly over everything. Mix well to ensure the chicken and veggies are fully coated. Cover and let marinate for 1 hour or up to overnight in the refrigerator to allow flavors to develop.
  2. Prepare for Baking: Preheat your oven to 375°F (190°C). Transfer the marinated chicken, bell peppers, and onions along with all the sauce from the bowl into a 13×9 inch baking dish. Evenly sprinkle some all-purpose seasoning over the top for extra flavor. If using butter, slice it into tablespoons and distribute it evenly on top of the chicken pieces to add richness and help create a golden brown crust.
  3. Bake the Chicken: Place the baking dish uncovered on the middle rack of the oven.
