A refreshing and nutrient-packed Açaí Bowl made in just 10 minutes, combining frozen mixed berries, banana, acai puree, and coconut yogurt, then topped with fresh fruit, granola, coconut flakes, and peanut butter for a delicious and energizing breakfast or snack.

Ingredients

Base Ingredients

  • 2 cups frozen mixed berries
  • 1 frozen banana, chopped (about 1 cup)
  • 3/4 cup pure apple juice
  • 1/2 cup coconut yogurt
  • 1 cup frozen acai puree (150g) or 1 tbsp acai powder

Toppings

  • 1/4 cup strawberries, sliced
  • 1 banana, sliced
  • 1/4 cup granola
  • 2 tbsp coconut flakes
  • 2 tbsp peanut butter

Instructions

  1. Blend the Base Ingredients: Toss the frozen mixed berries, chopped frozen banana, pure apple juice, coconut yogurt, and frozen acai puree into a blender. Blend on high speed until the mixture becomes smooth and creamy, which should take about 1 minute.
  2. Assemble the Bowl: Scoop the thick smoothie mixture evenly into two bowls. Top each bowl with sliced strawberries, sliced banana, granola, coconut flakes, and a spoonful of peanut butter for added texture and flavor.

Notes

  • Use frozen fruits to achieve a thick, smoothie-like consistency.
  • You can substitute the acai puree with acai powder if puree is unavailable.
  • For a vegan option, ensure the granola used does not contain honey.
  • Adjust the amount of apple juice for desired smoothie thickness.
  • Feel free to customize toppings to your preference, such as adding chia seeds or nuts.
