Ingredients

Rice

  • 1 cup jasmine or sushi rice
  • 2 cups water

Chicken and Sauce

  • 2 boneless, skinless chicken breasts, cut into bite-sized pieces

  • 2 tbsp honey
  • 2 tbsp fresh lime juice
  • 1 tbsp soy sauce
  • 1 clove garlic, minced

Instructions

  1. Cook the Rice: Rinse the jasmine or sushi rice under cold water until the water runs clear to remove excess starch. In a medium saucepan, combine rice and 2 cups of water, then bring to a boil. Reduce heat to low, cover, and simmer for 15 minutes. Remove from heat and let it steam with the lid on for an additional 10 minutes. Fluff the rice with a fork and gently stir in the chopped fresh cilantro to infuse the herb flavor evenly.
  2. Prepare the Honey Lime Sauce: In a small bowl, whisk together the honey, fresh lime juice, soy sauce, minced garlic, grated ginger, and chopped red chili if using. This sauce will provide the sweet, tangy, and slightly spicy glaze for the chicken.
  3. Sear the Chicken: Season the bite-sized chicken pieces with salt and pepper. Heat olive oil in a nonstick skillet over medium-high heat. Add the chicken pieces in a single layer, searing them for 5 to 7 minutes until they develop a golden-brown crust and are cooked through.
  4. Glaze the Chicken: Reduce the heat to medium and pour half of the prepared honey lime sauce over the chicken. Toss the chicken gently for 2 to 3 minutes, allowing the sauce to thicken and coat the pieces with a sticky, flavorful glaze. Remove from heat once glazed.
  5. Assemble the Stack: To create the layered presentation, press the cooked cilantro rice firmly into a ring mold or a small bowl placed upside down on each serving plate, ensuring it holds its shape well. Carefully invert the mold to release the rice onto the plate. Next, arrange the sliced ripe avocado evenly over the rice layer. Top the avocado with the sticky glazed chicken pieces.
  6. Finish and Serve: Lift the mold carefully to maintain the structure of the stack. Drizzle the remaining honey lime sauce around the plate for added flavor and visual appeal. Garnish with fresh lime wedges on the side for an extra burst of citrus. Serve immediately while warm and fresh.
