Quickly prepared in just five minutes, this salsa is perfect for serving with tortilla chips or as a zesty accompaniment to your favorite dishes. It tastes even better after sitting in the fridge for a few hours to let the flavors meld together.

Ingredients

Fresh Produce

  • 1 1/4 lbs ripe Roma tomatoes (about 56 tomatoes)
  • 2 green onions, ends trimmed and chopped into thirds
  • 1/3 cup chopped red onion (about 1/4 of a medium onion)
  • 1 jalapeno pepper, seeded and roughly chopped
  • 1/3 cup fresh cilantro (about a handful)
  • 1 large clove garlic, roughly chopped

Canned Goods

  • 1 (14.5 oz) can petite diced tomatoes

Seasonings & Other

  • 2 Tbsp fresh lime juice
  • 1/2 tsp chili powder
  • 1/4 tsp ground cumin
  • 1/2 tsp granulated sugar (optional)
  • Salt and pepper to taste

Instructions

  1. Prepare Ingredients: Gather and prepare all ingredients by trimming, chopping, and measuring as needed to ensure smooth processing.
  2. Combine & Pulse: Place all fresh and canned tomatoes, green onions, red onion, jalapeno, cilantro, garlic, lime juice, chili powder, cumin, sugar (if using), salt, and pepper into a food processor. Pulse in one-second bursts until the mixture is finely chopped to your preferred texture.
  3. Chill for Flavor: Transfer the salsa to a serving bowl or airtight container. For best flavor, refrigerate for a few hours to allow the ingredients to blend and marinate.
  4. Serve: Enjoy the salsa with tortilla chips or as a topping for your favorite Mexican dishes.
  5. Store: Keep the salsa refrigerated in an airtight container for up to one week.

Notes

  • For a spicier salsa, include the jalapeno seeds or add an extra jalapeno.
  • If you prefer chunkier salsa, pulse fewer times in the food processor.
  • Ripe Roma tomatoes contribute sweetness and body to the salsa; using fresh ripe tomatoes enhances the flavor.
  • The optional sugar balances the acidity of the tomatoes but can be omitted for a more natural taste.
  • Store any leftovers in a sealed container to maintain freshness.
