These Homemade Hot Pockets are a delicious, easy-to-make handheld snack filled with savory pizza sauce, pepperoni, and a blend of mozzarella and cheddar cheeses. Made from scratch with a simple yeast dough, they bake to golden perfection, offering a warm, cheesy treat perfect for lunch, dinner, or anytime craving hits.

Ingredients

Dough Ingredients

  • 1 cup warm water
  • 1 tablespoon granulated sugar
  • 1 tablespoon active dry yeast
  • 1 tablespoon olive oil
  • 2¼ cups all-purpose flour, plus more for dusting
  • 1 teaspoon salt

Filling Ingredients

  • ¾ cup pizza sauce
  • ½ cup pepperoni, quartered
  • 1 cup shredded mozzarella cheese
  • 1 cup shredded cheddar cheese

Instructions

  1. Activate the yeast: In a small bowl, combine the warm water, granulated sugar, and active dry yeast. Let it sit for 5 minutes until the mixture becomes frothy and bubbly, indicating the yeast is active.
  2. Make the dough: Stir the olive oil into the activated yeast mixture. Add the 2¼ cups of all-purpose flour and salt, stirring with a spatula until a sticky dough forms. If needed, add a bit more flour to bring the dough together, but it should remain somewhat sticky.
  3. Knead the dough: Turn the dough onto a floured surface and knead until smooth and elastic, about 8-10 minutes. Add up to ½ cup extra flour if the dough is too sticky, but avoid over-flouring.
  4. Let the dough rise: Lightly grease a mixing bowl and place the dough inside. Cover and allow it to rise in a warm spot until it doubles in size, about 30 minutes.
  5. Preheat oven: Preheat your oven to 450°F (232°C) and line a baking sheet with parchment paper.
  6. Form the pockets: Divide the dough into small portions. Roll each portion on a floured surface into a hand-sized circle.
  7. Fill the pockets: Spread pizza sauce evenly over each circle, then top with quartered pepperoni and a mix of mozzarella and cheddar cheese. Fold each circle over to form a half-moon and pinch the edges securely to seal. Avoid overfilling to prevent leaks.
  8. Bake: Place the filled pockets on the prepared baking sheet. Bake in the preheated oven for 10-15 minutes until the tops are lightly browned and the dough is cooked through.

Notes

  • To speed up the dough rising process, place the bowl in a warm area or near a gentle heat source.
  • Be sure to seal the edges well to avoid fillings leaking during baking.
  • Feel free to customize the filling with vegetables, cooked sausage, or other favorite pizza toppings.
  • Let the hot pockets cool for a few minutes before eating to avoid burning your mouth with hot cheese.
