Instructions

  1. Combine Ingredients: Place all the ingredients into a medium, heavy-bottom saucepan and stir to combine over medium heat.
  2. Bring to Boil: Heat the mixture while stirring frequently over medium-high heat until it reaches a rolling boil.
  3. Simmer the Jam: Reduce heat to low and simmer uncovered, stirring often to prevent sticking, for 40 to 50 minutes or until the jam reaches your desired thickness.
  4. Blend the Jam: Remove the pan from heat and use an immersion blender to finely chop the fig pieces and skins into a smoother consistency.
  5. Jar the Jam: Spoon the hot jam into sterilized 4 oz canning jars, filling each jar within ½ inch of the top.
  6. Seal the Jars: Wipe rims clean, place sealer lids on jars, and screw on the bands finger tight.
  7. Process in Water Bath: Submerge jars in a boiling water bath for 10 minutes, ensuring they are covered by at least 1 inch of water, adjusting for altitude as necessary.
  8. Cool and Store: Remove jars and let cool on a towel-lined countertop until room temperature. Confirm seals by listening for popping sounds. Store sealed jars in a cool, dark place; refrigerate any unsealed jars and consume within a month.
