Ingredients

Pie Crust

  • 1 Perfect Pie Crust Recipe*

Filling

  • ¼ cup butter
  • 8 cups thinly sliced apples, peeled and cored
  • 2/3 cup lightly packed brown sugar
  • 1 tablespoon all-purpose flour
  • 2 teaspoons cinnamon
  • 1 teaspoon lemon juice
  • ¼ teaspoon salt

Topping

  • 1 egg
  • 1 teaspoon water
  • Coarse sugar (optional)

Instructions

  1. Preheat and Prepare Pie Plate: Set aside a 9-inch pie plate and preheat your oven to 425°F (220°C) to ensure it’s ready for baking.
  2. Cook Apple Filling: In a large pot over medium-low heat, melt the butter. Add the sliced apples, brown sugar, flour, cinnamon, lemon juice, and salt. Stir to combine and cook, stirring occasionally, until the apples soften, about 8 to 10 minutes. Remove from heat and let the filling cool.
  3. Roll Out Bottom Crust: Divide your prepared pie dough into two halves if not already done. Lightly flour a work surface and roll out one disc to about 1/8-inch thickness, making it slightly larger than your pie plate. Gently transfer it to the pie plate, pressing it down to fit the bottom evenly.
  4. Make Egg Wash: In a small bowl, whisk together the egg and water; set aside to brush over the crust.
  5. Assemble Pie: Fill the bottom crust with the cooled apple mixture. Roll out the second dough disc on a floured surface and place it over the filling. Alternatively, cut the dough into strips and braid for a decorative top. Cut vents in the crust if not braiding. Trim excess dough and crimp edges to seal the pie.
  6. Apply Egg Wash and Sugar: Lightly brush the top crust with the egg wash. Sprinkle coarse sugar evenly on top if desired for added sweetness and crunch.
  7. Bake the Pie: Place the pie in the oven and bake at 425°F for 15 minutes. Reduce the oven temperature to 350°F (175°C) and continue baking until the crust is golden brown and the filling bubbles through vents, about 40 minutes more. Cover with aluminum foil if the crust browns too quickly.
  8. Cool Before Serving: Remove the pie from the oven and allow it to cool before slicing and serving to let the filling set properly.

Notes

  • The Perfect Pie Crust recipe is recommended for best results.
  • Granny Smith apples are preferred for their tartness, but Golden Delicious or Gala apples can also be used.
  • Cover the pie with foil during baking if the crust browns too fast to prevent burning.
  • For a decorative touch, braid the top crust instead of using a whole sheet and cut vents.
