These Homemade Cheese Crackers (Cheez-Its) are a delightful, buttery snack featuring sharp cheddar cheese and a hint of yogurt for tanginess. Crispy, golden, and perfectly seasoned, these crackers are easy to make from scratch and a delicious alternative to store-bought versions. Perfect for snacking, entertaining, or adding a cheesy crunch to your meals.

Ingredients

Cheese Crackers Ingredients

  • 8 ounces finely grated sharp cheddar cheese
  • 1 1/4 cups all-purpose flour (160g)
  • 4 tablespoons cold unsalted butter, cut into small pieces
  • 1/4 cup plain yogurt

Instructions

  1. Combine Ingredients: Pulse the sharp cheddar cheese, all-purpose flour, and cold unsalted butter in a food processor several times until the mixture resembles coarse crumbs with small pea-sized pieces.
  2. Add Yogurt: Add the plain yogurt to the mixture and pulse again for about a minute. The dough should remain crumbly but hold together when pressed between your fingers.
  3. Shape and Chill Dough: Remove the dough from the food processor and shape it into a log. Wrap the log in plastic wrap and refrigerate for at least 30 minutes. Chilling will make rolling and slicing easier. If stored longer, allow the dough to warm to room temperature for a few minutes before rolling.
  4. Preheat Oven and Prepare Surface: Preheat your oven to 350°F (175°C). Place a sheet of parchment paper on your work surface and lightly sprinkle a small amount of flour over it to prevent sticking.
  5. Roll Out Dough: Place the chilled dough log in the center of the parchment. Roll it out evenly from the center outward, turning the dough occasionally to maintain a consistent thickness of about 1/8 to 1/4 inch.
  6. Cut Crackers: Using a pizza cutter or a fluted pastry wheel, cut the rolled dough into 1-inch squares. Trim the edges for perfect squares. Carefully transfer the entire parchment with the cut dough onto a cookie sheet, spacing the crackers slightly apart to prevent sticking.
  7. Add Signature Holes: Using the tip of a skewer or chopstick, poke a hole in the center of each cracker to create the classic Cheez-It look.
  8. Bake: Bake the crackers in the preheated oven for 17 to 20 minutes or until they turn lightly golden and puff slightly.
  9. Cool and Serve: Remove the crackers from the oven and allow them to cool completely on the baking sheet before enjoying their crisp texture.

Notes

  • Use sharp cheddar cheese for the best flavor intensity.
  • Plain yogurt can be substituted with sour cream if preferred, but ensure it is plain and unsweetened.
  • Chilling the dough is essential for easier handling and better texture.
  • If dough is too hard after refrigeration, let it sit at room temperature for 5-10 minutes before rolling.
  • Store baked crackers in an airtight container to maintain crispness.
  • To enhance flavor, you can lightly sprinkle the crackers with sea salt before baking.
