These homemade hot pockets are a delicious and satisfying breakfast treat featuring flaky puff pastry filled with a savory mixture of chicken sausage, eggs, cheddar cheese, and sautéed peppers and onions. Baked to golden perfection, they are perfect for a hearty breakfast or brunch that can be enjoyed fresh or on the go.

Ingredients

Pastry

  • 2 sheets puff pastry (thawed)
  • All-purpose flour (for dusting surface)
  • 1 egg (beaten, for egg wash)

Filling

  • 2 tablespoons butter
  • 4 breakfast chicken sausage links (chopped)
  • 1 red pepper (finely chopped)
  • 1/4 red onion (finely chopped)
  • 7 eggs
  • 1 cup grated cheddar cheese
  • 1 green onion (finely chopped)

Instructions

  1. Preheat Oven and Prepare Baking Sheet: Preheat your oven to 425°F (220°C) and grease a baking sheet or line it with parchment paper to prevent the puff pastry from sticking.
  2. Sauté Vegetables and Sausage: In a large skillet over medium-high heat, melt the butter and sauté the finely chopped red pepper, red onion, and chicken sausage pieces for about 5 minutes until the peppers are softened and the sausage is heated through.
  3. Cook the Eggs with the Mixture: Beat 6 of the eggs in a bowl. Pour them into the skillet with the sausage and vegetables. Scatter the grated cheddar cheese on top and scramble everything together using a spatula. Cook for about 1-2 minutes until the eggs are fully cooked. Remove the skillet from heat, transfer the egg mixture to a plate, and refrigerate to cool.
  4. Prepare Puff Pastry Base: Unfold one sheet of the thawed puff pastry and cut it into 3 even sections lengthwise. Then cut each section in half to create 6 even rectangles. Place these rectangles onto a parchment-lined baking sheet and refrigerate while preparing the remaining dough.
  5. Roll Out Second Puff Pastry Sheet: Lightly flour your countertop or work surface. Unfold the second sheet of puff pastry and roll it out until it is about 4 inches wider and longer than its original size. Cut this expanded sheet into 6 rectangles, matching the size of the first set.
  6. Apply Egg Wash to Base Pastry: Remove the baking sheet with the first set of puff pastry rectangles from the refrigerator. Beat the remaining egg and lightly brush the tops of these rectangles with the egg wash for sealing and browning.
  7. Add Filling and Toppings: Evenly divide the cooled egg and sausage mixture on top of each puff pastry rectangle with the egg wash. Then, sprinkle the finely chopped green onions over the filling.
  8. Seal the Hot Pockets: Take one of the rolled puff pastry rectangles and lay it over each filled base rectangle. Using the tines of a fork, crimp the edges together firmly to seal the perimeter of each hot pocket, ensuring the filling stays inside during baking. Repeat for all pieces.
  9. Prepare for Baking: Brush the tops of each sealed hot pocket with the remaining egg wash. Using a sharp knife, make 2 or 3 slashes on the top of each hot pocket to allow steam to escape during baking. Place the baking sheet in the preheated oven.
  10. Bake and Cool: Bake for 25 to 30 minutes until the puff pastry is golden brown and crisp. Remove the pan from the oven and allow the hot pockets to cool for at least 10 minutes before serving to ensure the filling sets and avoid burns.
