This High-Protein Fried Pickle Dip delivers mouthwatering flavor with simple ingredients like cottage cheese and Greek yogurt. It’s a creamy, tangy, and crunchy appetizer perfect for gatherings, quick snacks, or game days, combining the zest of dill pickles with a protein-rich base balanced by toasted panko breadcrumbs.

Ingredients

Dip Base

  • 1 cup low-fat cottage cheese, 2% works great
  • ½ cup plain nonfat Greek yogurt
  • ¾ cup finely chopped dill pickles
  • 12 tablespoons pickle juice, to taste
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • ½ teaspoon dried dill, or 1 tablespoon fresh, finely chopped
  • Pinch of black pepper

Toasted Topping

  • ¼ cup panko breadcrumbs, gluten-free if needed
  • 1 teaspoon butter or olive oil
  • Optional: pinch of garlic powder or smoked paprika

Instructions

  1. Blend cottage cheese: Blend the cottage cheese in a blender or food processor until it becomes smooth and creamy, ensuring a consistent base for the dip.
  2. Mix ingredients: Transfer the smooth cottage cheese to a bowl. Add the plain nonfat Greek yogurt, chopped dill pickles, and pickle juice. Season with garlic powder, onion powder, dried or fresh dill, and a pinch of black pepper. Stir thoroughly to combine all flavors evenly.
  3. Toast panko breadcrumbs: Heat a small skillet over medium heat. Add butter or olive oil, then the panko breadcrumbs. Toast while stirring frequently for 2–3 minutes until the breadcrumbs turn golden brown and crisp. Remove from heat to prevent burning.
  4. Assemble dip: Pour the prepared dip into your serving bowl. Evenly sprinkle the toasted panko over the top to add a crunchy texture. Add optional garlic powder or smoked paprika on the breadcrumbs if desired for extra flavor.
  5. Serve or store: Serve the dip immediately to enjoy the contrast of creamy and crunchy textures. Alternatively, refrigerate until ready to serve, but add the toasted breadcrumbs just before serving to maintain crunch.

Notes

  • Adjust pickle juice quantity to achieve preferred tanginess and moisture level.
  • For an extra flavor boost, try adding smoked paprika or an additional pinch of garlic powder to the toasted breadcrumbs.
  • Use gluten-free panko breadcrumbs if catering to gluten sensitivities.
  • Serve with fresh vegetable sticks, crackers, or chips for delicious dipping options.
