Ingredients

Chicken Salad

  • 3 cups rotisserie chicken, shredded or chopped
  • ¾ cup roughly chopped dill pickles
  • ½ cup finely chopped celery
  • 1 bunch finely chopped dill (about 1/3 cup)

Dressing

  • ⅓ cup plain Greek yogurt
  • ⅓ cup mayonnaise (preferably avocado oil mayo)
  • 2 tbsp mustard (1 tbsp grainy mustard and 1 tbsp Dijon mustard)
  • Zest and juice of 1 lemon
  • Salt, to taste

Instructions

  1. Prepare the chicken: Finely shred or dice 3 cups of rotisserie chicken using your hands or a knife to ensure bite-sized pieces for even mixing.
  2. Make the dressing: In a large bowl, combine ⅓ cup plain Greek yogurt, ⅓ cup mayonnaise, and 2 tablespoons of mustard. Add the zest and juice of one lemon, then whisk everything together until smooth and fully combined. You can adjust by using only Greek yogurt or mayonnaise for a lighter or richer dressing, maintaining a total of ⅔ cup.
  3. Add the vegetables: To the dressing bowl, add ¾ cup roughly chopped dill pickles, ½ cup finely chopped celery, and about 1 bunch of finely chopped fresh dill (approximately 1/3 cup). Mix thoroughly to combine all ingredients evenly.
  4. Season and chill: Taste the salad and add salt according to your preference. Once seasoned, cover and refrigerate the salad for at least 15 minutes to allow the flavors to meld and the salad to chill before serving.

Notes

  • You can substitute store-bought rotisserie chicken with homemade cooked chicken breast or thighs for freshness.
  • Adjust the amount of mustard to your taste preference, or try different types like spicy brown mustard for extra kick.
  • Chilling the salad for longer than 15 minutes enhances the flavor further, making it ideal for meal prep.
  • For a dairy-free version, use dairy-free yogurt and mayonnaise alternatives.
  • This salad can be served on its own, with crackers, or as a sandwich filling.
