Ingredients

Dry Ingredients

  • 1/4 cup unsweetened cocoa powder
  • 2 tbsp Dutch cocoa powder or additional unsweetened cocoa powder
  • 1 cup coconut sugar or xylitol
  • 1/2 tsp baking soda
  • 1/2 tsp salt

Wet Ingredients

  • 1/2 cup water
  • 1/2 cup applesauce or mashed banana
  • 1/4 cup coconut oil or additional water
  • 2 tsp pure vanilla extract
  • 1 tsp apple cider vinegar

Instructions

  1. Preheat Oven and Prepare Pan: Preheat your oven to 350°F (175°C). Grease or line a cupcake tin to prevent sticking.
  2. Mix Dry Ingredients: In a large mixing bowl, combine the flour, unsweetened cocoa powder, Dutch cocoa powder, coconut sugar (or xylitol), baking soda, and salt. Stir well until thoroughly mixed.
  3. Add Wet Ingredients: Add the water, applesauce (or mashed banana), coconut oil (or extra water), vanilla extract, and apple cider vinegar to the dry ingredients. Mix until you form a smooth, even batter without lumps.
  4. Fill Cupcake Tins: Portion the batter evenly into the prepared cupcake tin, filling each cup about two thirds full to allow room for rising.
  5. Bake: Bake the cupcakes in the preheated oven for approximately 20 minutes. Test doneness by inserting a toothpick in the center; it should come out mostly clean.
  6. Cool and Serve: Remove cupcakes from the oven and allow them to cool completely before frosting or serving. For enhanced flavor and texture, cover loosely and let cupcakes sit overnight at room temperature. This also helps liners peel off easily.
