These Healthy Chocolate Chip Cookies are a nutritious twist on a classic treat, using whole wheat or spelt flour and dark chocolate chips for a rich, wholesome flavor. Softened butter and natural sugars create a creamy dough that’s chilled before baking to achieve the perfect texture. Slightly underbaked and topped with extra chocolate chips, these cookies are soft, chewy, and perfect for a guilt-free indulgence.

Ingredients

Cookie Dough

  • 1/2 cup unsalted butter (softened at room temperature and packed)
  • 1/2 cup cane or coconut sugar
  • 1 large egg
  • 1 teaspoon pure vanilla extract
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 1/4 cups whole wheat or spelt flour
  • 1/4 cup dark chocolate chips
  • 2 tablespoons dark chocolate chips (for topping)

Instructions

  1. Cream Butter and Sugar: In a large bowl, add the softened butter and sugar. Beat with a mixer until the mixture becomes creamy and smooth, ensuring the sugar is well incorporated for the right texture.
  2. Combine Wet and Dry Ingredients: Add the egg and vanilla extract to the creamed mixture and beat until fully combined. Then, add baking soda, salt, and flour gradually, beating until the cookie dough forms. Stir in 1/4 cup of dark chocolate chips using a spatula to evenly distribute.
  3. Chill the Dough: Place the cookie dough in the freezer and chill for 20 minutes. This step helps the cookies keep their shape while baking. Meanwhile, preheat the oven to 350°F (175°C) and line two cookie sheets with unbleached parchment paper or silicone baking mats.
  4. Shape the Cookies: Scoop the chilled dough using a regular ice cream scoop or spoon. Roll the dough into balls and place them on the prepared baking sheets, spacing them about 3 inches apart to allow room for spreading.
  5. Bake the Cookies: Bake the cookies in the preheated oven for 10 minutes. Remove them while they still appear underbaked, puffy, and light in color for the perfect chewy texture. Immediately place the remaining 2 tablespoons of dark chocolate chips on top of the hot cookies, allowing them to gently melt and form a beautiful chocolate blanket.
  6. Cool the Cookies: Allow the cookies to cool on the baking sheet for 15 minutes to set properly. Then transfer them onto a cooling rack to cool completely. As they cool, the chocolate chips will settle into delightful grooves, creating an inviting and appetizing appearance.

Notes

  • For best results, use softened butter at room temperature to ensure smooth creaming.
  • Chilling the dough helps prevent excessive spreading during baking.
  • You can substitute dark chocolate chips with semi-sweet or milk chocolate if preferred.
  • Use unbleached parchment paper or silicone mats to prevent sticking and ensure even baking.
  • Store cookies in an airtight container at room temperature for up to 5 days or freeze for longer storage.
