A quick and healthy chicken salad sandwich recipe combining cooked chicken breast with creamy Greek yogurt and mayonnaise, enhanced with garlic salt, Dijon mustard, crunchy nuts, celery, and sweet red grapes, served in a toasted pita pocket. Perfect for a nutritious lunch ready in just 10 minutes.

Ingredients

Chicken Salad

  • 1/2 large chicken breast (cooked)
  • 1/4 cup plain Greek yogurt
  • 1/4 cup mayonnaise
  • 1/4 teaspoon garlic salt
  • 1 teaspoon Dijon mustard
  • 1 tablespoon mixed nuts (chopped)
  • 1/4 cup celery (chopped small)
  • 1/4 cup red grapes (quartered)

Sandwich

  • Small handful lettuce
  • 1 pita

Instructions

  1. Toast the pita: Begin by toasting one pita until it is warm and slightly crisp to provide a sturdy and delicious base for the chicken salad.
  2. Prepare the ingredients: Shred or chop the cooked half chicken breast into small pieces. Chop 1-2 stalks of celery to measure 1/4 cup, quarter red grapes to get 1/4 cup, wash and chop the lettuce if needed, and chop the mixed nuts finely to yield 1 tablespoon.
  3. Make the chicken salad: In a small mixing bowl, combine the shredded chicken with 1/4 cup plain Greek yogurt, 1/4 cup mayonnaise, 1/4 teaspoon garlic salt, and 1 teaspoon Dijon mustard. Mix thoroughly until well incorporated. Then fold in the chopped celery, quartered grapes, and chopped nuts, stirring until evenly distributed.
  4. Assemble the sandwich: Open the toasted pita pocket and fill it generously with the prepared chicken salad mixture and a small handful of fresh lettuce. Serve immediately and enjoy.
  5. Storage: Store any leftover chicken salad in an airtight container in the refrigerator for up to 5 days for optimal freshness.

Notes

  • Using Greek yogurt reduces fat and adds protein compared to traditional mayonnaise-only chicken salad.
  • Mixed nuts add a satisfying crunch and healthy fats; walnuts or almonds work well.
  • Red grapes provide natural sweetness balancing the savory flavors.
  • To save time, use pre-cooked chicken breast or rotisserie chicken.
  • Make sure to toast the pita to prevent it from becoming soggy when filled.
  • Adjust garlic salt according to taste or substitute with regular salt plus a pinch of garlic powder.
