This Healthy Breakfast Cheesecake Soufflé is a delicious and nutritious single-serving treat that combines thick coconut or Greek yogurt with protein powder and a hint of natural sweetness. Lightly baked to achieve a fluffy, soufflé-like texture, it makes for a perfect quick breakfast or snack topped with fresh berries and your choice of toppings.

Ingredients

Base Ingredients

  • 1/2 cup thick coconut yogurt or Greek yogurt (must be thick; brands like CocoJune or Culina recommended)
  • 3 tbsp protein powder (your favorite variety)
  • 1 egg
  • 2 tsp maple syrup or honey (add an extra tsp if protein powder is not very sweet)
  • 1/2 tbsp cashew butter or almond butter (or 1 tsp melted coconut oil)
  • 1/4 tsp vanilla extract
  • Pinch of sea salt

Toppings

  • Fresh berries
  • Extra yogurt (optional)
  • Chia jam (optional)
  • Granola (optional)

Instructions

  1. Preheat Oven: Preheat your oven to 375°F to prepare for baking the soufflé.
  2. Blend Ingredients: Combine all the base ingredients in a blender and blend thoroughly until the mixture is smooth and free of lumps, ensuring a creamy batter.
  3. Prepare Ramekin: Lightly grease a small ramekin to prevent sticking and then pour the blended batter into it evenly.
  4. Bake: Place the ramekin in the oven and bake for about 25 minutes, though it may take closer to 30 minutes depending on your yogurt’s thickness. The soufflé should puff up and the center should feel firm but not hard. Avoid over-baking to keep it moist and fluffy.
  5. Add Toppings and Serve: Once baked, top your cheesecake soufflé with fresh berries, a dollop of extra yogurt, chia jam, granola, or any of your favorite toppings, and enjoy immediately.

Notes

  • Ensure the yogurt you use is very thick to achieve the right consistency for the soufflé.
  • You can substitute cashew or almond butter with melted coconut oil if preferred.
  • Adjust the sweetness by adding more maple syrup or honey depending on your protein powder’s sweetness level.
  • Serve immediately to enjoy the light, airy texture before it starts to deflate.
