Ingredients

Rice and Liquids

  • 1 cup uncooked white rice
  • 8 oz. crushed pineapple
  • Water to make a total of 2 cups liquid

Flavorings and Garnishes

  • 2 tablespoons butter
  • Juice of 1 lime
  • Zest of 1/2 a lime
  • Chopped cilantro, for garnish
  • 2 tablespoons white sugar (optional)

Instructions

  1. Add Rice: Place 1 cup of uncooked white rice into a saucepan to prepare for cooking.
  2. Prepare Pineapple and Water: Drain the 8 oz. of crushed pineapple into a 2-cup measuring cup; fill the remaining space with water until you have 2 cups total liquid.
  3. Combine Ingredients: Pour the crushed pineapple and water mixture into the saucepan with the rice. Add 2 tablespoons of butter on top.
  4. Cook Rice Mixture: Heat the saucepan on medium-high until the liquid reaches a boil.
  5. Simmer: Once boiling, reduce the heat to a simmer and cover the saucepan. Let cook for 15-20 minutes, or until the rice is fully cooked and liquid is absorbed.
  6. Final Flavoring: Remove the saucepan from heat and stir the rice well. Add the lime juice, lime zest, and optional sugar if desired. Mix thoroughly to distribute flavors evenly.
  7. Serve: Plate the rice and top with freshly chopped cilantro for a fresh, aromatic finish.
