Celebrate Halloween with these festive Halloween Deviled Eggs featuring four spooky varieties: Eyeball, Pumpkin, Spooky Green, and Spider. Each egg is creatively decorated using colorful food coloring and themed garnishes to make your party table both fun and delicious. Perfect as a party appetizer or a Halloween-themed snack, these deviled eggs are easy to prepare and serve up to 24 guests.

Ingredients

Eggs and Filling Base

  • 12 hard boiled eggs, peeled and halved, yolks and whites separated
  • 1/2 cup mayonnaise
  • 2 teaspoons Dijon mustard
  • 1/2 teaspoon kosher salt

Coloring and Garnishes

  • Purple food coloring
  • Sliced pimento-stuffed green olives (for eyeballs)
  • Orange food coloring
  • Curly parsley (for pumpkin stems)
  • Green food coloring
  • Black sesame seeds
  • Pitted whole black olives (for spiders)

Instructions

  1. Prepare the yolk mixture: Place the egg yolks in a small bowl and crush them with a fork until there are no large chunks. Add the mayonnaise, Dijon mustard, and kosher salt, then stir well until the mixture is smooth and thoroughly combined.
  2. Divide yolk mixture and whites: Decide how many varieties of deviled eggs you want to make (up to four). Divide the yolk mixture evenly into separate bowls according to the number chosen. Set aside 6 egg whites for each variety.
  3. Create Eyeball Deviled Eggs: Add purple food coloring drop by drop to one yolk mixture bowl until you reach the desired color. Spoon or pipe the purple yolk filling into the corresponding egg whites. Slice pimento-stuffed green olives crosswise to resemble eyeballs and place one slice atop each egg.
  4. Create Pumpkin Deviled Eggs: Stir orange food coloring into another yolk mixture bowl until the color looks like pumpkin orange. Fill the corresponding egg whites with this orange yolk mixture. Use a toothpick to gently etch lines on the yolk surface to mimic pumpkin ridges. Garnish each with a small piece of curly parsley to mimic a pumpkin stem.
  5. Create Spooky Green Deviled Eggs: Add green food coloring dropwise to the next yolk mixture bowl until the desired shade is obtained. Fill the egg whites with this green filling and sprinkle black sesame seeds on top for a spooky look.
  6. Create Spider Deviled Eggs: Keep the remaining yolk mixture without any food coloring. Fill the last set of egg whites with this mixture. Using a sharp knife, slice black olives into halves or pieces to form spider bodies and thin slices for legs. Assemble the olive spider parts on each egg to create spooky spider decorations.
