Ingredients

Eggs

  • 6 extra large eggs

Filling

  • 1/4 cup mayonnaise
  • 1 tablespoon dijon mustard

  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Green gel food dye

For Dyeing

  • Black gel food dye
  • Water (to dye eggs)
  • Black lava sea salt (for garnish)

Instructions

  1. Boil the Eggs: Arrange the eggs in a single layer in a pot and cover with cold water, ensuring the water is at least one inch above the eggs. Turn the heat to high and bring the water to a boil, uncovered.
  2. Cook and Cool: Once boiling, cook the eggs for 10 minutes. Remove the pot from heat and immediately run the eggs under cold water to stop the cooking process.
  3. Crack the Eggs: Using the back of a spoon or by gently rolling them on the counter, crack the shells of the boiled eggs carefully without peeling them completely.
  4. Dye the Eggs: Fill a large bowl with water and add black gel food dye. Whisk the water until it turns completely black. Submerge the cracked eggs fully in the black dyed water.
  5. Chill for Color: Transfer the bowl with eggs to the refrigerator and let them soak for at least 4 hours to create the marbled black effect on the shells.
  6. Peel and Prepare: Remove the eggs from the dye, peel the shells off under running water, and rinse. Cut the eggs in half lengthwise and carefully remove the yolks into a separate bowl.
  7. Make Filling: Add mayonnaise, dijon mustard, green gel food dye, hot sauce, smoked paprika, salt, and black pepper to the yolks. Mash with a fork until the mixture is smooth and creamy.
  8. Fill Egg Whites: Spoon or pipe the yolk filling back into the egg white halves, using a wide star tip if piping, to create an attractive presentation.
  9. Garnish and Serve: Sprinkle black lava sea salt over the filled eggs for added texture and flavor before serving.
