This Hailey Bieber Erewhon Strawberry Skin Smoothie is a creamy and refreshing beverage inspired by Hailey Bieber’s favorite smoothie from Erewhon. Packed with fresh and frozen strawberries, creamy coconut cream, avocado, banana, and skin-loving supplements like collagen, hyaluronic acid, and sea moss gel, this smoothie promotes glowing, healthy skin while delivering a deliciously sweet and tangy flavor.

Ingredients

Strawberry Glaze

  • 5 fresh strawberries
  • Juice of 1/2 small lemon
  • 1 teaspoon maple syrup

Coconut Cream

  • 1/3 cup coconut cream, room temperature (Zuma Valley recommended)
  • Vanilla liquid stevia to taste (about 2 drops)

Smoothie Base

  • 1/2 cup almond milk
  • 1 cup frozen strawberries
  • 1/4 avocado
  • 1/2 banana, frozen
  • 2 pitted medjool dates
  • 12 scoops collagen powder
  • 1 tablespoon sea moss gel
  • 1 tablespoon Neocell hyaluronic acid liquid
  • 1 cup ice cubes

Instructions

  1. Make the strawberry glaze: Place the fresh strawberries, lemon juice, and maple syrup into a blender. Puree until smooth. Transfer your homemade strawberry glaze to a small bowl or jar.
  2. Prepare the coconut cream: Transfer the coconut cream to a small jar. Stir in the vanilla liquid stevia to sweeten to taste, approximately 2 drops. Set aside.
  3. Blend the smoothie: Add almond milk, frozen strawberries, avocado, banana, medjool dates, collagen powder, sea moss gel, hyaluronic acid liquid, and ice cubes to the blender. Blend until smooth, adding more almond milk if needed for desired consistency.
  4. Assemble the smoothie: Spoon lines of coconut cream vertically along the inside of a glass for decoration. Pour about 1/4 cup of the strawberry glaze into the bottom of the glass. Carefully pour the blended strawberry smoothie on top of the glaze. Use a spoon or knife to gently create swirls if desired. Serve immediately and enjoy.

Notes

  • This smoothie requires a few extra steps and ingredients; however, you can double or triple the coconut cream and strawberry glaze portions and store them in the refrigerator for a few days for convenience.
  • Zuma Valley coconut cream is recommended as it is the brand used by Erewhon. If unavailable, any natural unsweetened coconut cream can be used as a substitute.
  • Sea moss gel can be purchased pre-made or you can prepare your own using a guide available online.
