Gyeran Mari is a classic Korean rolled omelette known for its fluffy texture and subtle savory flavor, enhanced with fresh green onions and carrots. This quick and easy recipe makes a perfect single serving breakfast or side dish that can be enjoyed warm or cold.

Ingredients

Egg Mixture

  • 5 medium eggs
  • 1 green onion, chopped
  • 2 tbsp carrot, chopped or grated
  • 1/4 tsp salt
  • 1/8 tsp black or white pepper

  • 1 tsp neutral oil

Instructions

  1. Whisk the Eggs: In a bowl, whisk the eggs thoroughly with salt and pepper until well combined and slightly frothy.
  2. Add Vegetables: Stir in the chopped green onion and grated or chopped carrot into the egg mixture and whisk again to distribute evenly.
  3. Heat Pan and Add Egg Mixture: Heat a 10-inch non-stick pan over low heat and add 1 teaspoon of neutral oil. Pour in about one-third of the egg mixture, spreading it evenly across the pan surface.
  4. Begin Rolling: As the top of the egg begins to set but is still slightly runny, lift the edges all around using a spatula or rice paddle and start rolling the omelette toward one side of the pan.
  5. Add Next Portion of Egg Mixture: Once rolled to one side, gently pull the omelette to the opposite side of the pan and pour in the next one-third of the egg mixture, tilting the pan to fill in gaps, especially at tapered ends in a round pan.
  6. Continue Rolling: Roll the omelette again towards the original side, and repeat the filling process with the final third of the egg mixture, ensuring to fill all uneven spots before rolling.
  7. Seal the Omelette: Use a spatula and your hand, if necessary, to hold the omelette against the pan to secure the final seal, avoiding finishing on short tapered sides.
  8. Rest and Slice: Remove the rolled omelette from heat and let it rest on a cool surface for a couple of minutes. Then cut it into 6 to 8 even pieces, trimming tapered ends if needed.
  9. Serve or Store: Serve immediately warm or allow it to cool completely before storing for later use.
